Ingredients:

  • 1 can of black or pinto beans

  • 1 can of corn

  • 1 cup of halved cherry tomatoes

  • 1 diced green or red bell pepper

  • ¼ cup of diced red onion (optional)

  • ¼ cup of chopped cilantro

  • ¼ cup of shredded cheese

Dressing

  • 3 tablespoons of olive oil

  • 3 tablespoons of lime juice

  • 1 teaspoon of garlic powder

  • Salt and pepper to taste

Optional: 1–2 teaspoons of honey for added sweetness

Directions:

  • Chop vegetables such as tomatoes, bell peppers, red onions, and cilantro.

  • In a bowl, combine beans, corn, tomatoes, peppers, and cilantro.

  • In a small cup, whisk together olive oil, lime juice, garlic powder, cumin, salt, and pepper. (Kids can lend a hand with the whisking!)

  • Pour the dressing over the mixture in the bowl and stir everything together.

  • Enjoy your creation with tortilla chips or crackers!
