No-Bake Peanut Butter and Oatmeal Energy Balls

Ingredients:

  • 1/8 cup peanut butter

  • 1 cup dry oats

  • 1 banana (mashed)

  • 1/4 cup honey

  • 2 tbs cocoa powder

  • 1/2 cup mini chocolate chips

  • dash of salt

  • 1/2 tsp vanilla (optional)

Directions:

  1. ADD all the ingredients to a medium bowl

  2. STIR to combine them (mixture should be sticky)

  3. REFRIGERATE at least 30 min

  4. Use a spoon to SCOOP the mixture into your hand

  5. ROLL into a ball

  6. REPEAT with the remaining mixture (about 12)
