Ingredients:
1 lb of ground turkey
2 medium sweet potatoes, peeled and diced
1 medium onion, diced
1 bell pepper, diced
2 cloves of garlic
2 tbsp of olive oil
1–2 tbsp of herbs (black pepper, paprika, oregano, thyme)
¼ cup of low-sodium chicken broth
Directions:
Dice sweet potatoes, onion, and bell pepper.
Cook sweet potatoes in a skillet with oil until slightly soft (8–10 min), then remove.
In the same skillet, cook turkey, onion, bell pepper, and garlic until the turkey is browned (6–8 min).
Return sweet potatoes to the skillet, season, and cook until tender (5–7 min).
Serve warm.
