Ingredients:

  • 1 lb of ground turkey

  • 2 medium sweet potatoes, peeled and diced

  • 1 medium onion, diced

  • 1 bell pepper, diced

  • 2 cloves of garlic

  • 2 tbsp of olive oil

  • 1–2 tbsp of herbs (black pepper, paprika, oregano, thyme)

  • ¼ cup of low-sodium chicken broth

Directions:

  • Dice sweet potatoes, onion, and bell pepper.

  • Cook sweet potatoes in a skillet with oil until slightly soft (8–10 min), then remove.

  • In the same skillet, cook turkey, onion, bell pepper, and garlic until the turkey is browned (6–8 min).

  • Return sweet potatoes to the skillet, season, and cook until tender (5–7 min).

  • Serve warm.
